Easy Brownie Cake With Box Mix

This brownie cake is the ultimate cake for brownie lovers and cookie lovers. This chocolate cake has two layers of brownies, Cool Whip with Oreo cookies in the middle, fudge frosting, and whipped cream. It’s a delicious brownie cake that you have to try.

I made this brownie cake years ago while vacationing at my Mother-in-law’s house. The kids were drooling, dipping their fingers every chance they got. While trying to take this picture, I heard a chair being pushed across the floor. The chair stopped right next to me, and Connor popped up. Talk about panic! It was hard to take a picture before they dove in.

Ingredients

Milk chocolate brownie mix – bake with one extra egg in the batter to make it cake-like
Cool Whip – Frozen cool whip, thawed. This will be mixed with the cookies to make your center-filling layer
Oreo Cookies – These will be ground up and folded in the whipped topping
Butter – Unsalted butter melted is a base for your homemade chocolate frosting
Cocoa – You’ll blend the chocolate with the melted butter to achieve a delicious-looking smooth chocolate
Confectioners Sugar – A sweetener and thickening agent for the frosting
vanilla – Vanilla pulls the chocolate frosting all together
Dash of Salt – This will balance out the sweetness in the frosting
Warm Milk – Use this to thin your frosting out, but only add 1 tbsp. at a time

How to Make a Brownie Cake

  • Prepare brownie mix with an extra egg in the batter to make it cake-like, and pour it evenly into the 2 round cake pans. Bake at 350 Degrees for about 30 minutes, or until a toothpick inserted in the middle of the brownie comes out clean.
  • Let the brownies cool completely.

Cool Whip Layer:

  • Use a food processor or blender, or let the kids break the Oreos in a zip-lock bag & transfer to a blender or processor. (They love that part!) **Try to break the cookies into a fine powder.
  • Use a mixer to combine the Cool Whip & broken Oreo Cookies.

Frosting:

  • In a small saucepan, over low heat, Melt butter.
  • Add Cocoa and stir.
  • Add the sugar, vanilla, & salt. Mix well.
  • Add 1 Tbsp. of milk to get the frosting to your desired consistency.
  • If frosting is left alone & becomes too thick, add more milk to thin.

Putting It All Together:

  • Take 1 Brownie Cake from the cake pan and place it on your cake server.
  • Spread the Cool Whip & Oreo Cookie Layer – Don’t worry if some Cool Whip goes over the edges – it looks yummy.
  • Place your second Brownie Cake over the Cool Whip & Oreo Cookie Layer.
  • Spread your fudge frosting over the top brownie cake.
  • Decorate with whipped cream, more broken Oreo chunks, more Oreo Cookies, and a Cherry On Top! You can serve it with ice cream.

Expert Tips

Make sure you let the brownies cool completely before adding the middle cool whip layers or it will melt

Thin out the thickened frosting with more milk. You can also re-heat the frosting to melt it down

I would make this recipe on the day of serving. If you want to make it a day in advance, make the components separately, store brownies covered at room temperature, the frosting and whipped cream layer should be stored in the fridge. Reheat the frosting and add milk to thin it out for spreading.

Variations

Make a frosting glaze by only using one cup of confectioner sugar

For thicker brownie layers, you can make this cake with two milk chocolate box mixes divided into two cake pans

Storing

Store this cake at room temperature for a couple of hours. After a couple of hours, the whip may lose some of its’ texture.
