Asparagus Casserole

This is a delicious asparagus casserole is a recipe that I found, and adapted from an Old Cookbook! I made this to compliment Easter dinner! This cheesy, vegetable dish was one of the favorites around the table! Here’s the recipe:

You’ll Need:

  • 16 oz. of fresh asparagus
  • 2 cups of cubed Velveeta Cheese
  • 1 egg
  • 1/2 t accent
  • 1/2 cup of chicken broth
  • 3/4 cup of Italian flavored bread crumbs
  • Optional – Panko Bread Crumbs

Now:

  • Preheat the oven to 325
  • Rinse and snap the asparagus (take a handful of asparagus, hold them by both ends, and bend – they will snap apart – discard the bottom portion, and use the top)
  • In a small bowl, mix the egg, accent, and chicken broth
  • Grease a casserole dish
  • Place half of the asparagus at the bottom
  • Add 1/2 of the bread crumbs to the top of that
  • 1/2 of the cheese cubes
  • Repeat once more
  • Pour the broth mixture over the top
  • For a little extra crunch, you can sprinkle Panko Bread Crumbs over the top
  • Bake for 40 minutes
  • Asparagus Casserole
  • That’s it!
