Y’all, I love a good stuffed mushroom. Emphasis on the word – good. I have been trying out mushroom recipes for years, trying to find a good one to bring serve at holiday meals. Every single one has fallen short of my expectations. That is, until now! Hallelujah and Amen! After all of these years, I have finally found a delicious Spinach Stuffed Mushroom recipe. Ingredients
  1. 16 large fresh mushrooms
  2. 1 Tbsp. of olive oil
  3. 5 oz. of fresh spinach
  4. 1/2 tsp. of garlic salt
  5. 1/3 cup of sour cream
  6. 3 oz. of cream cheese
  7. 1/3 cup of shredded mozzarella cheese
  8. 3 Tbsp. grated Parmesan cheese
  9. 1/4 tsp. salt
  10. 1/4 tsp. of ground pepper
Instructions
  1. Preheat the oven to 400 degrees
  2. Wash and dry mushrooms
  3. In a skillet, add the oil and turn burner on medium heat
  4. Remove the stems from the mushrooms, coarsely chop them and place in skillet
  5. Add the spinach and cook for about 1 minute, or until mushrooms are tender and spinach is wilted
  6. Add the garlic salt and cook for about 30 seconds longer
  7. In a medium sized bowl, mix the rest of the ingredients
  8. Add the spinach mixture to the bowl and fold in
  9. Spray an 8x10 baking dish
  10. Fill mushrooms with spinach mixture and set them bottom side down into baking dish
  11. Bake for about 15 minutes, or until mushrooms are tender
