Chocolate Bundt Cakes with Chocolate Peppermint Whipped Cream

This one goes out to all of the chocolate lovers out there. It’s a chocolate cake covered in chocolate and filled with more chocolate. Chocolate Heaven. Make these festive little cakes for your celebrations.

Mini Chocolate Bundt Cakes With Chocolate Peppermint Whipped Cream Filling

Mini Chocolate Bundt Cake

For The Cake Portion:

You’ll Need:

  • 2 cups of flour (all-purpose)
  • 1 & 1/2  cups of granulated sugar
  • 6 T of unsweetened cocoa
  • 1 &1/2 t of baking soda
  • 1 t of salt
  • 3/4 cups of softened butter
  • 2 cups of prepared chocolate pudding
  • 3 eggs

For The Whipped Cream Center:

You’ll Need:

  • 1 & 1/2  cups of chilled whipping cream
  • 1/2 cup of powdered sugar
  • 1/4 cup of unsweetened cocoa
  • 1 t of peppermint extract

For The Chocolate Glaze:

You’ll Need:

  • 3/4 cups of semisweet chocolate chips
  • 3 T of butter
  • 1 T corn syrup (light)
  • 1/4 t vanilla extract

Now, On To The Cake: (makes about 2 dozen mini cakes)

  • Preheat the oven to 350 degrees F.
  • Grease your mini bundt pans
  • Mix flour, granulated sugar, cocoa, baking soda, and salt in a large mixing bowl
  • Add butter and pudding mix until well moistened
  • Add eggs 1 at a time mixing in between each egg
  • Pour mixture into your prepared pan
  • Bake for about 25-30 minutes – check with a toothpick inserted into the center of the cake, if it comes out clean, you are good to go
  • When the cake is done, allow them to cool for 5 minutes, and turn them out onto a work surface to cool a little longer
  • While the cake is baking, mix your Whipped cream by:

  • Mix the powdered sugar and cocoa together in a mixing bowl
  • Add the whipping cream and extract, beat on high until stiff

Glaze:

  • prepare your chocolate glaze by setting a pan into a steaming pan of water, (if you have a double broiler – this would be the time to use it)
  • Melt butter and add chocolate chips, and corn syrup. Stir until smooth, and then add vanilla

Spoon the glaze over the mini cakes. When you are ready to serve fill the cavities with your chocolate peppermint whipped cream by placing the whipped cream into a zip-tight bag and snipping a corner off to squeeze the cream through. Garnish with crushed pieces of soft peppermint candies
