The perfect cookies for lemon lovers. I honestly think that these Lemon Cookies are the softest, most chewy cookies I’ve ever had. They have just the right amount of tang and sweet lemon flavor that melts in your mouth.

Making Ahead and Storage

This Lemon Cookie Recipe can be made several days in advance and left out at room temperature. They will not harden. To ensure that they stay soft you can cover them in an airtight container and store them at room temperature. If you cover them, you might want to place wax paper between layers of cookies to prevent them from sticking to each other

Can I Freeze the Cookie Dough?

Absolutely. You can usually freeze cookie dough for up to three months. Drop rolled cookie dough on parchment-lined sheets with space between them and freeze. Once frozen, transfer to a freezer-proof bag. Allow for a few extra minutes while baking to make up for the frozen dough

Can I Glaze these Lemon Cookies?

You can, but I wouldn’t recommend it. The cookies already have a lemonade brushed topping with granulated sugar sprinkled on top making them the perfect combination of tangy and sweet.

How do I make a Glaze for cookies?

If you do decide to add a lemon glaze to the cookies, just mix about 1 cup of powdered sugar with 1 to 2 Tbsp. of water and a squeeze of fresh lemon for some tartness until it thickens to the right glaze consistency (it will harden more as it cools on the cookie). If it is too runny, add more powdered sugar.

Tips and Tricks for Making this Lemon Cookies Recipe:

  • I like to roll my cookies into balls the old-fashioned way just like my mom used to into cookie dough balls, but it’s much easier and more uniform to use a cookie scooper
  • Don’t brush cookies with lemonade directly on your baking sheet, unless you don’t plan on reusing it to bake more. The lemonade and sugar will get all over the parchment paper or mat
  • Use wax paper to catch the runaway lemonade you brush on the cookies. Place a sheet under your wire rack. When you’re done, fold up your wax paper and toss it in the trash – Easy, Peasy!
  • Lemon zest would be a delicious addition to the sugar and lemonade topping
