Summertime Waldorf Salad

This Summertime Waldorf Salad is so refreshing and tasty!

You’ll Need:

  • Apples – cored and sliced. If you prefer, you can chop them into bite sized pieces
    I used Granny Smith Apples, and Royal Gala – they are nice and crisp
  • 1 cup of chopped celery
  • 1 cup of raisins
  • 1/2 cup of chopped pecan bits
  • 1 cup of mayonnaise
  • 1 can of sliced pineapple in the juice
  • 1 T of pineapple juice (from the can above)

Now, onto the salad:

  • You’ll want to make this a day ahead. It’s better if left to chill in the refrigerator overnight
  • Cut the pineapple rings into bite sized pieces – reserve the juice!

  • It’s so simple 🙂 Just pour your apples, celery, raisins, pineapple, and pecans in a large bowl

  • Add the mayonnaise and pineapple juice
  • Mix it all together
  • Cover and set in the refrigerator to chill overnight
