This Shrimp Po Boy is so easy to make.  The ultimate classic seafood sandwich. With a delicious Cajun Sauce that’s dripping with deliciousness, this sandwich won’t last long on anyone’s plate.

Warm sandwich recipes are my favorite type of sandwich to eat. This sandwich is even better because it has a delicious cajun sauce dripping onto the plate to sop up with the bread. Shrimp is a favorite in our house. I’m always on the lookout for shrimp recipes like this healthy naan shrimp wrap. It doesn’t have to be seafood though. This French dip sandwich with dipping juice is simply amazing along with this Grilled Jalapeno Popper Grilled Cheese.

Shrimp Po Boy with Cajun Sauce

This recipe was inspired by a fried shrimp Po’ boy with tartar sauce. I know the authentic Shrimp Po Boy sandwiches are made with fried shrimp. I’m not huge into frying my food or of tartar sauce, so this is my little twist on the delicious-looking sandwiches that caught my eye in my old Family Circle Magazine.

Easy Shrimp Po Boy with Cajun Sauce

The dressing is super simple and the shrimp can be grilled with a little salt and pepper seasoning, or even sauteed in olive oil. Either way is easy, peasy.

Ingredients

  • 2 tsp. cajun seasoning
  • ½ cup mayonnaise
  • ¼ cup roasted red peppers drained
  • 1 tsp. garlic powder
  • ¼ tsp. onion powder
  • ¼ tsp. salt
  • 1 Tbsp. olive oil
  • 1 lb. uncooked shrimp deveined with shell and tail removed
  • salt and pepper to taste
  • 1 tomato sliced
  • 1 red onion sliced
  • 1 romaine lettuce rinsed and cut into sandwich size
  • 4 hoagie rolls 
  • 4 tbsp butter soft unsalted

Instructions

  • In a small blender, add mayonnaise, peppers, and seasonings
  • Blend until smooth and creamy
  • In a pan over med/high heat, add the olive oil and warm
  • Add the shrimp to the hot pan
  • Shake a little salt and pepper over the shrimp
  • Continue to cook shrimp, tossing occasionally until shrimp turns pink
  • Spread butter on the inside of your hoagie rolls and either – place them under the oven broiler to toast them, or use a hot skillet to toast the buttered inside of the roll
  • Remove rolls, and spread cajun sauce on one side
  • Add tomatoes, lettuce, onion, and shrimp
