Turtle Brownies

Brownies are a weakness for me in the dessert category. I can say no to ice cream. I can say no to cake. I can even say no to chocolate. But stick a brownie in front of me, and it’s all over! I should have known better than to mix one of my favorite cakes with more faves like caramel, pecans, and chocolate to create a Red Velvet Turtle Brownie. I’m telling you, this brownie is heaven. Serve it with my recipe for homemade whipped cream or chocolate-flavored whipped cream for the ultimate brownie treat.

Ingredients

  •  Red Velvet Cake Mix: I used Betty Crocker’s with pudding in the mix
  • Butter unsalted – Softened. This will make the brownies turn out rich and help them become light and fluffy.
  • Evaporated milk – You’ll mix part of this with the red velvet cake mix and part of it with the caramel bits to make the delicious caramel sauce
  • Chocolate chips – You’ll need chocolate to make this amazing dessert. I have used both milk chocolate and semi-sweet. I prefer semi-sweet
  • Caramel bits – I used to use actual caramel squares. Thank goodness for caramel bits. They make life so much easier, and they are delicious.
  • Evaporated milk – This makes the caramel so rich and creamy
  • Pecan halves or pieces – Either one works, but I do happen to love the bigger halves. It’s so satisfying to bite into a tender pecan coated in caramel and chocolate.

How to Make Red Velvet Turtle Brownies

  • Preheat the oven to 350 degrees.
  • In a large bowl, add the entire box of cake mix, plus the softened butter and 2/3 cup of the milk
  • Mix well
  • You can grease a 9×13 baking pan or use parchment paper to line it. Either way, pour about 1/2 of the Red Velvet mixture into the pan and spread it

  • Bake that for about 10 minutes.
  • While baking, grab a saucepan, and over medium to medium/high heat, add the 1/3 cup of milk and the caramels. Stir often while the caramels melt, then when the caramel is all mixed into the milk and smooth, remove from heat

  • Pull the cake out of the oven
  • Add the caramel mixture, chocolate chips, and pecans to the warm cake.

  • Spread the remaining cake mix over everything
  • Bake for an additional 18 to 20 minutes
  • When done, the cake mix will most likely still be a fudge brownie consistency and moist.

  • Allow it to cool, or serve it up warm with ice cream and more caramel.
