I grew up in the midwest with chicken casseroles, meatloaf, potluck dishes, and meat and potato meals. This dish with creamy chicken and pimentos served over a biscuit was a new experience for me that I loved. You better know that I did not leave that house without the recipe.

  2. In the meantime – while those are baking in the oven…
  3. In a large skillet over medium heat, melt the butter
  4. Add the drained mushrooms and pepper
  5. Cook for a few minutes or until the pepper is getting tender
  6. In a small bowl, mix the flour, pepper, and salt
  7. Use a whisk to stir the flour mixture into the vegetables cooking in the skillet
  8. Turn the heat off of the skillet, and stir in the cream, liquid from the can of mushrooms, and chicken broth
  9. Turn the heat to medium/high and heat to boiling – stirring constantly for about 1 minute. The roux should turn into a gravy-like mixture
  10. Fold in the chicken and olives
  11. Serve over the baked biscuits

  • 1/2 cup of green bell pepper – diced
  • 1/2 cup of unsalted butter
  • 1/2 cup of all-purpose flour
  • 1 tsp. of salt
  • 1/4 tsp. of ground black pepper
  • 2 cups of heavy cream
  • 1&3/4 cups of chicken broth
  • 2 cups of cooked – cubed chicken breast
  • 1 (4 oz.) jar of green olives stuffed with pimentos – drained
  • 1 package of Fluffy Store-Bought Refrigerated Buttermilk (or your favorite style) biscuits
