Beef Enchilada with Red Sauce Recipe

We always love Mexican as a main dish. I have definitely filled this blog with lots of our favorite Mexican meals. Can you use Flour Tortillas in place of Corn Tortillas for Enchiladas?

  • You can use flour tortillas in place of corn tortillas in an enchilada recipe. Use smaller flour tortillas that are a similar size to corn tortillas

Do you need to cook corn tortillas when using them for enchiladas?

  • You do not have to cook corn tortillas before using them for enchiladas but they should be moist. Microwave them with a damp paper towel for a few seconds to moisten them before rolling. This is not necessary for an enchilada casserole recipe

Can you substitute the green enchilada sauce for red enchilada sauce?

  • Yes. It’s all about your sauce preference or what you have on hand. If you have only green sauce, then it is perfectly fine to use it

What is the difference between green and red enchilada sauce?

  • The green sauce is made with green chile peppers, vinegar, and spices like garlic and cumin. Red sauce is made from red chile peppers, vinegar, and spices like chili powder and garlic

My personal preference is green, but the red tastes really good in this recipe.

Ingredients

  • 1 & 1/2 pounds of ground beef (sirloin preferred)
  • 1 sweet onion
  • spices – garlic, onion, mustard, chili powder, salt
  • 1 (15 oz.) can of enchilada sauce (red or green)
  • 1 (15 oz.) can of tomato sauce
  • 1 cup of Mexican-style shredded cheese
  • 10 corn tortillas
  • sliced black olives

Ingredients

  • 1&1/2 lbs. ground beef lean
  • 1 medium sweet onion chopped
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. mustard powder
  • ½ tsp. chili powder
  • ½ tsp. salt
  • 1 15 oz. enchilada sauce – green or red
  • 1 15 oz. tomato sauce
  • 1 cup Mexican style shredded cheese more to make it really cheesy
  • 10 corn tortillas

Instructions

  • Brown beef and onion together
  • Drain – if necessary
  • Add seasoning to beef and stir in
  • Mix enchilada sauce and tomato sauce together
  • Place enough to cover the bottom of a 9×13 inch casserole dish
  • Cover with half of the tortillas – tearing them in half where needed
  • Add half of the sauce, half of the cheese, and all of the ground beef
  • Layer with the rest of the torillas
  • Add the rest of sauce
  • top with cheese
  • Bake at 350 degrees for 20 minutes

Notes

Storage – Store for up to 3 days covered in the refrigerator. Reheat in the oven or on individual plates in the microwave
