  • It depends, I usually like to add pre-cooked rice just to be sure that the rice is fully cooked. However, if the conditions of adding hot liquid and covering the dish with foil are met – the rice will probably cook just fine during the baking period.

Ingredients

  • 2 cups chicken breast – cooked and cubed
  • 2 cups white rice cooked
  • 1 cup cheddar cheese grated
  • 1 cup chicken broth
  • ¼ cup all-purpose flour
  • 1 small onion – diced
  • 4 Tbsp. unsalted butter – melted
  • 1 tsp. salt
  • 1 10 oz. can of cream of mushroom soup
  • 2 cups Ritz cracker crumbs – about 15-20 crackers

Instructions

  • In a large bowl, mix chicken, rice, cheese, broth, flour, onion, butter, salt, and soup
  • Pour into a greased 9×13 inch casserole dish
  • Spread out so it is even on top and sprinkle Ritz cracker crumbs over the top
  • Bake at 350 degrees for 1 hour

Notes

Store covered in the refrigerator for 3-4 days. To reheat, cover with foil and bake until heated through – remove the foil and bake for 5 minutes longer.
*you can also microwave on individual plates until heated through

    Hi. I’m thinking of making this for my son and his family, includes two toddlers. Just looking at the ingredients it seems like it needs some kind of flavoring. Any suggestions?

      Hi Tai! The chicken broth should give off a salty flavor, and the soup, onion, and cheese will also help flavor this dish. But, if I ever feel like a casserole needs more flavoring, My go-to spices would be, onion powder, mustard powder (which gives a little kick), garlic powder, (1 tsp. of each) – and a little salt and pepper (1/4 tp 1/2 tsp. of each). Easy on the salt as the chicken broth has salt in it. Also, with kids (toddlers in particular), I might get rid of the diced onion. My kids didn’t always like that texture. The onion powder is a great substitute. I hope this helps.
