Easy and delicious Cheesy Chicken and Rice Casserole. Perfect for busy nights.


  • 2 cups of chicken breast – cooked and cubed
  • 2 cups of cooked white rice
  • 1 cup of grated cheddar cheese
  • 1 cup of chicken broth
  • 1/4 cup of all-purpose flour
  • 1 small onion – diced
  • 4 Tbsp. of unsalted butter – melted
  • 1 tsp. of salt
  • 1 can of cream of mushroom soup
  • Ritz cracker crumbs – about 15-20 crackers


  • In a large bowl, mix everything except the Ritz crackers together
  • Pour into a greased 9×13 inch casserole dish
  • Spread out so it is even on top and sprinkle cracker crumbs over the top
  • Bake at 350 degrees for 1 hour


Store covered in the refrigerator for 3-4 days. To reheat, cover with foil and bake until heated through – remove the foil and bake for 5 minutes longer.
