These are actually really easy to make. Don’t worry. I’ll show you step-by-step how you can easily make these for a fall treat and have a dozen on the table in no-time.

Make-Ahead and Storage: 

Can I make these Chocolate Covered Strawberries in Advance?

Although these chocolate-covered strawberries are the freshest the day they are made, they can be made a day in advance and stored covered in the refrigerator

Storage: Because the strawberry will need refrigeration to maintain their fresh quality, it is suggested that you store these covered in the fridge

Melting Chocolate in the Microwave:

  • pour the chocolate melts into a microwave-proof glass bowl and set the microwave on for 1 minute
  • using a silicone spatula or stirrer, stir until smooth
  • if needed – place back into the microwave for 30 more seconds and stir until smooth

Why did my chocolate thicken up and get hard?

It was overheated or came into contact with liquid. Add a very small amount of lard, or coconut oil to thin it out. Warning, the chocolate will not set up as well as it previously would have. It may take longer to dry and may be thinned out

Tips and Tricks:

  • I learned pretty quickly that it was a little too difficult to push a pretzel stem into the strawberry before coring it
  • any fall colored sprinkles will do to accent the top of your acorn, but I really love the multi-colored fall jimmies
  • make sure you have wax paper on your counter to hold anything coated in chocolate. Most everything that is chocolate-covered will lift off of wax paper pretty easily

Ingredients:

  • fresh strawberries – rinsed and dried with a paper towel
  • light cocoa chocolate candy melts – these will be used to dip the strawberries into
  • fall sprinkles – a cute accent and decoration for these chocolate acorns
  • mini pretzel sticks – these will be used for the stem
  • a small microwave-proof glass bowl – I don’t know why, but I find that a glass bowl works best with melting chocolate
  • wax paper – this is to protect your surface from the melted chocolate
  • paring knife – to core strawberries

How do you make chocolate-covered strawberry acorns?

  • dip strawberries fully in melted chocolate
  • cut off the stem and core strawberry
  • flip the strawberry around and dip the top
  • push into fall jimmies
  • add a pretzel stem

Ingredients

  • l lb. of fresh strawberries - pick out 12 of the best ones
  • 11 oz. of melting chocolate - light brown
  • ½ cup of fall jimmies - the amount will vary
  • 6 mini pretzel sticks - a few more might be necessary

other equipment:

  • wax paper
  • silicone utensils for stirring
  • microwavable bowl - small

Instructions

prepping

  • rinse and pat strawberries dry
  • melt chocolate melts in a small bowl - microwave instructions are in the notes
  • pour some sprinkles into another small bowl
  • cut pretzel sticks in half
  • set out wax paper

  • holding the leaves of the strawberry dip strawberries, one by one, into the chocolate covering them all the way up to the greenery
  • set those down to dry on wax paper

  • when dry, cut the stems off of the strawberries and core them out
  • if the top is juicy, pat it dry

  • dip the top into the chocolate - only going down about 1/2 inch

  • immediately press the top into the jimmies to coat
  • push the pretzel stick into the hallowed out the core and set it down to dry

Notes

Can I Make more than 12 Strawberries with this recipe?

Yes. 12 is just a rough estimate. Usually, even in 1 lb. of strawberries, there will be some that are not the best for dipping. If you can find more than 12 good strawberries, then just increase the number of pretzels and possibly sprinkles. I still think that 11 oz. of chocolate should be enough. (hopefully)
