I love the old-fashioned cookie recipes like cookie bars. They are some of my absolute favorite snacks to eat. This particular cookie bar has a coconut and caramelized center in this chewy bar and is a lethal combination for me. They are delicious and pretty much, irresistible. The kids loved these as an after-school snack. They didn’t last long on the platter. They’d also make a great party dessert. They are a lot like a brownie. Just cut them into squares and watch them disappear.

Ingredients

Crust

  • ½ cup butter – unsalted
  • 1 tsp. salt
  • ½ cup brown sugar
  • 1 cup flour

Topping

  • ½ cup brown sugar
  • 1 tsp. vanilla
  • 2 beaten eggs
  • 2 Tbsp. flour
  • ½ tsp. baking powder
  • â…› tsp. salt
  • 1&1/2 cups shaved coconut
  • 1/2 cup of nuts chopped – optional

Instructions

  • Preheat the oven to 350 degrees
  • In a large bowl, mix the crust ingredients together and spread out into a 9×12 pan
  • Bake the crust for 15 min.
  • In another bowl, mix the rest of the ingredients together and spread over the baked crust
  • Bake for another 15 minutes
  • Let cool, and cut into bars
