Creamy Cornbread Casserole

Ingredients

  • 1 large egg
  • 1 c of sour cream
  • 1/2 stick of melted unsalted butter
  •  1 (8.5 oz.) box of Jiffy cornbread mix
  • 1 T sugar
  • 1/2 t salt
  • 1 (15 oz.) can of sweet corn – drained
  • 1 (15 0z.) can of cream-style corn

Instructions

  1. Preheat the oven to 350 degrees
  2. Mix all of the ingredients – (except for corn) together in a large bowl
  3. Fold in corn
  4. Pour into a greased 2 qt. casserole dish
  5. Bake for 40-45 minutes, or until a toothpick comes out clean when inserted in the middle of the cornbread
