What typically goes into a Chicken Pot Pie?

  • Cubed chicken, frozen vegetables like green beans, carrots, lima beans, corn, peas, and potatoes. Some types of cream soup, milk, and seasoning are mixed with vegetables. A crust can be on top or on the top and bottom of the pot pie.

What are some add-ins for Chicken Pot Pie?

  • Potatoes are a common add-in, but should probably be par-boiled before adding to the mixture. Otherwise, they may not cook all of the ways through
  • Fresh spinach
  • Canned mushrooms, drained
  • Any frozen vegetable that is thawed and drained

How do you thicken Chicken Pot Pie?

  • I typically use a cream-based soup mixed with soup to thicken the chicken pot pie

  •     1 cup of milk (2%)
  •     1 can of cream of chicken soup
  •     1/2 tsp. of seasoned salt
  •     2 cups of cubed chicken breast (1-2 breasts)
  •     1 (16 oz.) bag of frozen veggies – thawed
  •     1 cup of shredded cheddar cheese, Mexican style divided
  •     1 cup of French fried onions – divided
  •     1 (8 oz.) tube of refrigerated crescent roll dough

Ingredients

  • 1 cup milk 2% or whole
  • 1 can cream of chicken soup
  • ½ tsp. seasoned salt
  • 2 cups chicken breast 1-2 breasts – cubed
  • 1 16 oz. frozen veggies – thawed
  • 1 cup shredded cheddar cheese Mexican style divided
  • 1 cup french fried onions – divided
  • 1 8 oz. refrigerated crescent roll dough tibe

Instructions

  • Combine milk, salt, THAWED veggies, 1/2 cup of the cheese, chicken, and 1/2 of the onions
  • Pour the mixture into a greased 2&1/2 quart casserole dish
  • Bake at 350 degrees for about 20 minutes
  • Take out of the oven and sprinkle on the rest of the cheese and the onions
  • Then take your crescent roll dough
  • Unwrap and separate into 2 long rectangles – push the broken pieces together
  • Cut that into long strips ( about 1/2 wide) and start building your lattice – weaving the dough
  • Pop back into the oven for another 15 minutes, or until dough is cooked through

Notes

  • If you have any leftovers, cover and refrigerate for up to 3 days. Reheat in the oven at 350 degrees with aluminum foil covering the pan for about 15-20 minutes – or until heated through – or on individual plates in the microwave
  • My casserole dish is about 10 in. by 8 in.
