Mexican Lasagna Recipe {Easy}

Mexican lasagna

A delicious Mexican recipe for a family dinner.

Ingredients

  • 1&1/2 lbs. of ground beef – sirloin or very lean
  • 2 cans (14 oz. each) of stewed tomatoes
  • 1 medium sweet vidalia onion, chopped
  • 1/2 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. table salt
  • 1/4 tsp. of ground black pepper
  • flour tortillas – I used 4 (10 in.) tortillas. You can also use 6 inch flour tortillas – you’ll probably use around 6
  • 3 cups shredded Mexican Cheese Blend
  • 1 can (2 oz.) of sliced ripe black olives – drained

Instructions

  • In a large skillet, brown the beef – drain if necessary
  • Add tomatoes, onion and spices
  • Simmer, uncovered for 20 minutes
  • Arrange 1 layer of tortillas on the bottom of the pan – overlapping if needed
  • Cover tortillas with half of the beef mixture
  • Sprinkle half of the cheese over the beef
  • Repeat layers of tortillas, beef and then cheese
  • Sprinkle with olives
  • Bake at 350 degrees for 30 minutes
  • Serve with your favorite taco toppings such as…sour cream, chopped tomatoes, chopped chives, black beans, and guacamole

Notes

Recipe Variations:

  • Add drained black beans and drained sweet corn to the beef mixture. Cook along with beef, tomatoes, and onions

Side suggestion:

  • Spanish rice, refried beans and guacamole

Topping Suggestions:

  • sour cream, tomatoes, chives, diced jalapeno

What are good add-ins for a Mexican Lasagna Recipe?

  • Enchilada sauce poured on the bottom and/or over the top layer
  • Green Chile mixed into the beef mixture
  • Canned Corn – drained – mixed into beef mixture
  • Black Beans – drained – mixed into beef mixture
  • Sour Cream – layer on top and under a layer of cheese
  • Salsa – added to beef mixture and cooked down
  • Rice – added to beef mixture

Can you make Mexican Lasagna Ahead of Time?

  • You can make Mexican Lasagna up to 1 day in advance. Cover before baking and refrigerate until ready to bake

  • Covered and refrigerated, Mexican Lasagna can last up to 3-4 days. Reheat in the oven or microwave leftovers
