One Pot Meal, Chicken And Rice Skillet Casserole

We all need these easy to do on the stove top dinners for our busiest of nights! I love that this is all done in one skillet! Less dishes to clean! Here’s the recipe:

One Pot Meal, Skillet Chicken & Rice Skillet Casserole

Ingredients

  • 1 Package of Uncle Ben's Long Grain & Wild Rice or something similar
  • Butter - Use the rice packet's measurement guide
  • Water - Use the ric e packet's measurement guide
  • ¼ cup of Miracle Whip
  • 1 can of Cream of Mushroom Soup
  • 1 T butter
  • 3 Chicken Breast
  • ¼ c of Milk

Instructions

  • Using a large skillet, add the contents of the rice packet with the butter and water suggestion on the package of rice
  • Stir in the miracle whip, and soup
  • Add Chicken breasts and close the lid
  • Once the chicken and rice has cooked, and rice is tender - about 25 minutes - add milk and stir in
  • Add a slice of tomato to each breast of chicken and a slice of mozzarella
  • Place the lid back on and allow tomatoes to get tender and let cheese melt - just a couple more minutes
