I love the shortcut recipes. Love them! This one (I have recently discovered) can be made with either Baking Mix, or if you don’t have that handy…Pancake Mix. I discovered this when I was all set to make these with my little girl and found absolutely NO BAKING MIX in my pantry. We used pancake mix as an alternative – fingers crossed – and they were perfect.

Can you use fresh or frozen blueberries in blueberry muffins?

  • You can use either one. If you are using frozen, rinse the blueberries to defrost them and get rid of any extra water from freezing them

  • There a few things you can do to make your muffins less dense
  1. Use unbleached flour – the grain flours tend to be denser. If you are using a grain flour, mix it with part unbleached flour
  2. Avoid overmixing – everything that is placed in the muffing to make it rise releases Carbon Dioxide ( 2 parts oxygen, and 1 part carbon). If you overmix, you are decreasing the air bubbles that help the muffins remain light and fluffy
  3. Raise the temperature of your oven while you are preheating it, then lower it to the right temperature just before placing the muffins inside

Ingredients

  • 2&1/2 cups baking mix or pancake mix
  • ½ cup sugar
  • 1 large egg
  • â…” cup water
  • ¼ cup canola oil
  • 1&1/2 cup blueberries fresh or frozen blueberries

Instructions

  • Preheat the oven to 400 degrees
  • In a large bowl, combine the baking mix or pancake mix with the sugar
  • In a separate, smaller bowl, combine the egg, water, and oil
  • Add the wet bowl to dry bowl, and stir until moistened
  • Fold in the blueberries
  • Pour into prepared muffin pans, lined with cupcake liners
