Slow Cooker Gingered Pork Spare Ribs With Herb and Citrus Rice

What a great recipe for company or those busy nights! You’ll love the flavor and tenderness of this tangy, herb dish!


  1. 1 cup of beef broth
  2. 1/3 cup of sherry
  3. 1/4 cup of soy sauce
  4. 3 Tbsp. of honey
  5. 1 Tbsp. of rice vinegar
  6. 1 Tbsp. of minced ginger
  7. 3 garlic cloves – sliced
  8. 1 cup of baby carrots
  9. 1 medium sweet onion – chopped
  10. 3 lbs. of pork spare ribs – cut into sections of about 3
  11. 1/2 tsp. of salt
  12. 1/2 tsp. ground pepper


  1. 3 cups of instant brown rice
  2. 3 green onions – sliced
  3. 3 Tbsp. chopped fresh cilantro
  4. 2 Tbsp. chopped pickled jalapeno
  5. 1/4 tsp. grated lime peel – reserve the lime/ cut in half

For gravy/sauce

  1. 1 Tbsp. cornstarch + 1 Tbsp. water – mixed


  1. In a small bowl whisk the first seven ingredients
  2. Place the onions and carrots into the slow cooker
  3. Add the rib pieces
  4. Sprinkle them with salt and pepper
  5. Pour the sauce that you made from the first seven ingredients over the ribs, onions, and carrots
  6. Cook on high for about 6-8 hours or until the meat is tender and starting to brown

Making Rice

  1. When you are ready for dinner, cook the instant brown rice according to the package directions
  2. In a medium bowl, mix the green onions, cilantro, jalapeno, and lime peel
  3. Mix in the brown rice, and squeeze the lime over the rice and cilantro mixture


  1. Pour the juices from the slow cooker into a large skillet, and over med./high heat add the cornstarch/water mixture – cook, boiling until thickened
  2. Serve ribs over rice with carrots and sauce


I have divided the recipe into different stages. Feel free to substitute another flavored rice for the rice portion. A nice rice pilaf would be delicious.
