Easy to make buttermilk pancakes


  • 2 cups of unsifted all-purpose flour
  • 2 tsp. of baking soda
  • 1 tsp. of table salt
  • 3 Tbsp. of granulated sugar
  • 2 large eggs
  • 2&1/3 cup of low-fat buttermilk
  • unsalted butter for cooking


  • Preheat a large skillet – cast iron, if you have it
  • Mix in a large bowl, eggs, and buttermilk until well combined
  • Whisk in the flour, soda, sugar and salt – mix well
  • Rub about 1 tsp. of butter in the center of the heated skillet
  • Add about 1/2 cup of the batter and spread until it is an even circle
  • When the surface is bubbly, flip and cooks on the other side – for about 1-2 minutes longer
  • Repeat with the rest of the batter – adding more butter before each pancake
  • Serve with more butter, syrup, and fruit


Top with your favorite fruits and maple syrup
