Creamy Chicken Enchiladas with Sour Cream Sauce {The Best!} 

The creamy sour cream sauce for these enchiladas tops chicken, tomato, and green chiles filled tortillas - making a flavor that is unbelievably delicious. 

unsalted butter   sweet onion - chopped green pepper - chopped  chopped cooked chicken  Rotelle 


– unsalted butter – all-purpose flour – ground coriander – salt – chicken broth – sour cream – shredded cheese  (Mexican blend) Extra: Flour Tortillas 


Cook pepper and onion until tender. Add to chicken and Rotel

-melt butter  -add flour, coriander, salt and chicken broth -let cool -add sour cream and 1/2 cup of cheese  

-Combine chicken mixture and 1/2 cup of the sour cream mixture  -Fill tortillas with chicken mixture -roll and place seam side down

Bake at 350 for about 25 minutes 

Enjoy with relish of tomatoes and green pepper
