Slow Cooker Gingered Pork Spare Ribs With Herb and Citrus Rice

Materials

  • 1 cup beef broth
  • cup sherry
  • ¼ cup soy sauce
  • 3 Tbsp. honey
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. minced ginger
  • 3 garlic cloves - sliced
  • 1 cup of baby carrots
  • 1 medium sweet onion - chopped
  • 3 lbs. pork spare ribs - cut into sections of about 3
  • ½ tsp. salt
  • ½ tsp. ground pepper

rice:

  • 3 cups instant brown rice
  • 3 green onions - sliced
  • 3 Tbsp. fresh cilantro chopped
  • 2 Tbsp. pickled jalapeno chopped
  • ¼ tsp. lime peel grated - reserve the lime/ cut in half

For gravy/sauce

  • 1 Tbsp. cornstarch + 1 Tbsp. water - mixed

Instructions

  • In a small bowl whisk the first seven ingredients
  • Place the onions and carrots into the slow cooker
  • Add the rib pieces
  • Sprinkle them with salt and pepper
  • Pour the sauce that you made from the first seven ingredients over the ribs, onions, and carrots
  • Cook on high for about 6-8 hours or until the meat is tender and starting to brown

Making Rice

  • When you are ready for dinner, cook the instant brown rice according to the package directions
  • In a medium bowl, mix the green onions, cilantro, jalapeno, and lime peel
  • Mix in the brown rice, and squeeze the lime over the rice and cilantro mixture

Gravy/Sauce

  • Pour the juices from the slow cooker into a large skillet, and over med./high heat add the cornstarch/water mixture - cook, boiling until thickened
  • Serve ribs over rice with carrots and sauce

Notes

I have divided the recipe into different stages. Feel free to substitute another flavored rice for the rice portion. A nice rice pilaf would be delicious.
