Individual Hand Held Apple Pies

refrigerated pie crusts
Topping:

cinnamon

unsalted melted butter
Instructions
Using a large bowl, coat apples, tossing them in lemon juice
Over medium heat in a large skillet, melt the butter
Add apples, and cook until tender for about 5 minutes
Mix the brown sugar, cornstarch, cinnamon, and cloves together
Add the spice mixture to the apples.
Continue to cook for about 5 more minutes, or until mixture thickens, and apples look tender
Remove the mixture from heat, and stir in the vanilla
Remove the pie crusts from the tin liner, and place them on a lightly floured surface
Add 1/4 of the mixture to the center of each one, and spread it out a little
Fold the crust over so the edges meet together
Fold the edges up and over to form a thick crust, and push in with your thumb along the edge
Prick the top with a fork
Transfer to a baking sheet
Bake for about 10 minutes, or until the crust is golden brown
Mix the cinnamon and sugar together
Brush the top of the pies with the melted butter, and sprinkle with the cinnamon-sugar mixture
Cool, and cut in half (you should now have 8 total)
Wrap each one with a cloth napkin, and tie to make it easier to hold
