Homemade Chocolate Coca-Cola Cake {Moist & Delicious}

This Coca-Cola Chocolate Cake Recipe is moist and delicious. Perfect for potlucks and tailgates.

Materials

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 tsp. baking soda
  • ½ tsp. salt
  • ½ tsp. c Optional: 1/2 tsp. of cinnamon optional: refer to notes below 
  • 12 oz. coca-cola 
  • 1 cup butter - cubed
  • ¼ cup of baking cocoa
  • 2 large eggs
  • ½ cup buttermilk 
  • 1 tsp. vanilla extract

Frosting/Glaze

  • 1 cup coca-cola
  • ½ cup butter - cubed
  • ¼ cup baking cocoa
  • 4 cups confectioners' sugar

Instructions

  • Preheat the oven to 350 degrees
  • Grease a 9 x 13 inch baking sheet 
  • In a large bowl, whisk the flour, sugar, baking soda and salt
  • In a medium sized saucepan, warm cola, butter and cocoa
  • Bring the mixture to a boil making sure all butter has melted
  • Remove from heat and pour into flour mixture - stir until combined with cola mixture
  • In a small bowl, whisk eggs, buttermilk and vanilla
  • Add to the flour mixture - whisking everything together
  • Pour into greased pan
  • Bake 25 minutes or until toothpick inserted in the middle comes out clean

While the cake is baking and is almost done (about 15 minutes before it is done baking) prepare the glaze...

  • In a medium saucepan, bring 1 cup of cola to a boil
  • Boil until it is reduced into 1/2 cup - This should take approximately 10-12 minutes
  • Stir in the butter until melted 
  • Remove from heat and add confectioners sugar - stir until smooth
  • Pour over hot cake 

Notes

  • The glaze can be temperamental. If you don't reduce the glaze to 1/2 cup, it will be thin. A thinner glaze will soak into the cake more than a thick glaze will and most of your frosting will end up inside the cake. Don't worry though, the cake will still be delicious
  • Cinnamon is optional. I have made the cake with and without it. We prefer the cake without cinnamon. If you think you'd like to try the cake with cinnamon, then mix it in with the flour, sugar, baking soda and salt. I also show it added in the video
