Materials

  • 1&1/2 lbs. ground beef lean
  • 1 medium sweet onion chopped
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. mustard powder
  • ½ tsp. chili powder
  • ½ tsp. salt
  • 1 15 oz. enchilada sauce - green or red
  • 1 15 oz. tomato sauce
  • 1 cup Mexican style shredded cheese more to make it really cheesy
  • 10 corn tortillas

Instructions

  • Brown beef and onion together
  • Drain - if necessary
  • Add seasoning to beef and stir in
  • Mix enchilada sauce and tomato sauce together
  • Place enough to cover the bottom of a 9x13 inch casserole dish
  • Cover with half of the tortillas - tearing them in half where needed
  • Add half of the sauce, half of the cheese, and all of the ground beef
  • Layer with the rest of the torillas
  • Add the rest of sauce
  • top with cheese
  • Bake at 350 degrees for 20 minutes

Notes

Storage - Store for up to 3 days covered in the refrigerator. Reheat in the oven or on individual plates in the microwave
