- 1&1/2 lbs. ground beef lean
- 1 medium sweet onion chopped
- ½ tsp. garlic powder
- ½ tsp. onion powder
- ½ tsp. mustard powder
- ½ tsp. chili powder
- ½ tsp. salt
- 1 15 oz. enchilada sauce - green or red
- 1 15 oz. tomato sauce
- 1 cup Mexican style shredded cheese more to make it really cheesy
- 10 corn tortillas
Brown beef and onion together
Drain - if necessary
Add seasoning to beef and stir in
Mix enchilada sauce and tomato sauce together
Place enough to cover the bottom of a 9x13 inch casserole dish
Cover with half of the tortillas - tearing them in half where needed
Add half of the sauce, half of the cheese, and all of the ground beef
Layer with the rest of the torillas
Add the rest of sauce
top with cheese
Bake at 350 degrees for 20 minutes
Storage - Store for up to 3 days covered in the refrigerator. Reheat in the oven or on individual plates in the microwave
