Santa Hat Christmas Rice Krispies Treats

- 3 Tbsp. butter unsalted
- 1 10 oz. package regular Marshmallows or 4 cups of miniature marshmallows
- 6 cups rice cereal
- 1 tbsp. red food coloring - liquid or gel (amount will vary - add until you get the desired color)
- 1 16 oz. white frosting
melt the butter in a saucepan - over medium heat
add the marshmallows and stir in until melted
remove from heat
add food coloring until you achieve your desired color
in a large mixing bowl - add your rice cereal
pour the food coloring over the cereal
transfer to 2 round wax paper-lined cake pans (you really only need to set a square of wax paper over the cake pans and let the weight of the marshmallow cereal pull it down)
mash the cereal down with a greased silicone spatula until it's pretty level
let cool for at least 30 minutes - up to an hour
remove the wax paper from the pan and push the paper down
cut into 8 equal pieces
fill your piping bag with white icing and decorate the brim with 4-5 stars going across and the tip of the hat with 1 star

If you've been too impatient like I was and you decorated the treats while they are warm and gooey, you might see separation at the bottom of your Santa hat. You wouldn't think that a little bit of frosting would weigh it down, but it does. Just cut that edge off, and wait a little longer until it's set (the marshmallow has cooled enough so it's firmer) and decorate again.

Store at room temperature in an air-tight container for up to 3 days.
