- 6 pineapple rings
- popsicle sticks
- 6 oz. of chocolate-flavored chocolate melts or chocolate-flavored bark
- 1 cup coconut flakes optional
set a piece of wax paper onto a small tray that is small enough to fit into the freezer
place pineapple rings onto wax paper and place them into the freezer
freeze pineapple slices
on your work surface, spread popsicle sticks out - one for each pineapple ring popsicle
in a small bowl melt some of the melted chocolate melts
use tongs to dip slices halfway into melted chocolate
place down on a popsicle stick
optional: sprinkle coconut flakes onto the melted chocolate
let chocolate harden
to strengthen the hold on the popsicle stick, turn popsicles over and place a spoonful of melted chocolate onto the popsicle stick where the pineapple meets the stick

- make these popsicles in small batches of 5 or 6, or take one pineapple ring out at a time to prepare popsicles. Once the pineapple starts to melt, juice from the fruit will drip into the melted chocolate and cause it to thicken up and harden.
- If the chocolate starts to harden and seize up, then you'll have to start with a new bowl of melted chocolate
- to strengthen the hold on the pineapple even more to the chocolate, turn the pineapple pops over and spoon some melted chocolate over the section of the popsicle stick that is attached to the pineapple ring
