Yippee! It’s Summer! 🙂 I don’t know about you, but I get excited when I see the season’s first bin of sweet corn. I buy tons of it. It’s always a good deal, and the kids love it. At least, I always think they’ll love it. But, somehow, there is always one or two cobs left after dinner. I used to throw them out, until my dad introduced me to this tasty side dish. Actually, I think I could eat a whole plate of this, and make it my main course. It’s so delicious and so simple.

Tips for making Sauteed Fresh Corn:

  • Cook in unsalted butter to control the amount of salt used in the recipe to your taste
  • Use leftover corn from cooked corn on the cob or fresh corn off of the cob – Cook either the same way
  • Add different fresh vegetables from your garden for a delicious summer side
  • Diced sauteed green pepper pairs deliciously with sauteed corn 
  • Salt the vegetables to your taste 
  • Taste the vegetables and add more salt if needed 
  • Cook corn until it is browned 

What are some other fresh vegetables that would go good with fresh corn?

  • zucchini
  • yellow squash
  • tomatoes
  • green pepper
  • jalapeno pepper 
  • sweet Vidalia onion
  • mushroom slices 

How do you make Sauteed Fresh Corn? 

  1. Cut the corn off of the leftover corn on the cob
  2. Cut other vegetables – like fresh green pepper (preferred) 
  3. Melt butter in a large skillet 
  4. Add fresh vegetables and cook for about 5 minutes, stirring occasionally
  5. Let vegetables brown 
  6. Add salt to your taste

Ingredients

  • 2 Tbsp. of unsalted butter
  • Leftover corn on the cob – cut off of the cob
  • Green Pepper – chopped
  • Salt

Instructions

  • Using a large skillet, over med-high heat – melt butter
  • Cook green pepper for a few minutes – stirring occasionally
  • Add corn, and continue to saute the two vegetables – I like to let the corn brown a little on the edges
  • Add salt to your taste
  •  

Notes

  • Feel free to use fresh corn that is not leftover. Cook it the same way
  • Mix in other fresh vegetables like squash and onions for even more flavor 

Store any uneaten corn in a closed container in the refrigerator for up to 2 days.
