Pumpkin Spice Cookies

Packed with all of the flavors of fall and delicious brown sugar icing, these Pumpkin Spice Cookies are the perfect fall treat. They are soft, chewy, and delicious.

– coconut oil – sugar – brown sugar – egg – canned pumpkin – vanilla extract – all-purpose flour – baking powder – baking soda – ground cinnamon – allspice – ground cloves – salt – chopped pecans – butter – milk – powdered sugar


– In a large bowl, cream the coconut oil with the sugars – Add the egg, pumpkin and extract stir in – In another bowl, mix the flour, powder, soda, spices and salt  – Add the flour mixture to the wet mixture, and mix well


– Stir in the pecans – Spoon onto an ungreased baking sheet – Bake until the edges start to get a little golden – Let cool completely before adding the frosting

– In a saucepan, melt the butter – Add the brown sugar and bring the mixture to a boil – Cook while stirring


– Remove from heat and let this mixture cool down  – Add the milk and powdered sugar – Stir until it is a nice creamy frosting – Spread over cookies
