Easy Black Bean Soup Recipe

Materials

  • 1 Tbsp. olive oil
  • 1 small sweet onion chopped
  • 1 tsp. minced garlic
  • 2 15 oz. black beans - undrained
  • 2 cups chicken broth
  • 1 16 oz. salsa
  • 4 tsp. lime juice
  • 2 tsp. cumin grated

Instructions

  • In a large soup pot, heat the olive oil over medium-high heat
  • Add onions and garlic
  • Cook for about 5 minutes until tender
  • Place one can of beans and 1 cup of chicken broth in blender and blend until mostly smooth
  • Add the blended mixture, remaining beans, remaining broth, salsa, lime juice and cumin to the cooking onion and garlic.
  • Bring to a boil
  • Reduce heat to low, cover and cook for around 20-30 minutes

Notes

  • Garnishes: sour cream, tortilla strips, and fresh cilantro
