- 1 Tbsp. olive oil
- 1 small sweet onion chopped
- 1 tsp. minced garlic
- 2 15 oz. black beans - undrained
- 2 cups chicken broth
- 1 16 oz. salsa
- 4 tsp. lime juice
- 2 tsp. cumin grated
In a large soup pot, heat the olive oil over medium-high heat
Add onions and garlic
Cook for about 5 minutes until tender
Place one can of beans and 1 cup of chicken broth in blender and blend until mostly smooth
Add the blended mixture, remaining beans, remaining broth, salsa, lime juice and cumin to the cooking onion and garlic.
Bring to a boil
Reduce heat to low, cover and cook for around 20-30 minutes
- Garnishes: sour cream, tortilla strips, and fresh cilantro
