In a large mixing bowl or mixer, mix the sugar, salt, yeast and only 3 cups of the flour
In a saucepan, over low heat, heat the milk and 4 Tbsp. of butter to about 130 degrees - the liquid should be as warm as a hot bath - not boiling
Add the warm milk and butter mixture to the dry ingredients
Use a mixer to beat the ingredients until blended together
Increase the speed to medium and beat for 2 minutes
Add 1&1/4 cups of flour to the mixture
Continue to beat the mixture for 1 more minute
Use a wooden spoon to mix in 4 more cups of flour
Spread a small amount of flour onto your work surface and turn dough onto the surface
Knead the dough for about 10 minutes - while adding 1/4 c. of flour as you knead
Shape the dough into a ball
Place the ball of dough into a greased bowl, cover and let rise for 1 hour - or until doubled
Punch the dough down
Put it back onto the lightly floured surface
Cut the dough in half
Let it rest for 15 minutes
Grease 2 loaf pans
Shape and set the dough inside the loafe pans
Let the dough rise for another hour - or until doubled
Preheat the oven to 400 degrees
Brush the loaves with melted butter
Bake 30 - 35 minutes
Crust should be golden
