Mexican Lasagna Recipe {Easy}

A delicious Mexican recipe for a family dinner.

Materials

  • 1&1/2 lbs. ground beef - sirloin or very lean
  • 2 14 oz. stewed tomatoes
  • 1 medium vidalia onion chopped
  • ½ tsp. garlic powder
  • ½ tsp. chili powder
  • ½ tsp. table salt
  • ¼ tsp. ground black pepper
  • 4 10 in. flour tortillas You can also use 6 inch flour tortillas - you'll probably use around 6
  • 3 cups Mexican Cheese Blend shredded
  • 1 2 oz. black olives sliced - drained

Instructions

  • In a large skillet, brown the beef - drain if necessary
  • Add tomatoes, onion and spices
  • Simmer, uncovered for 20 minutes
  • Arrange 1 layer of tortillas on the bottom of the pan - overlapping if needed
  • Cover tortillas with half of the beef mixture
  • Sprinkle half of the cheese over the beef
  • Repeat layers of tortillas, beef and then cheese
  • Sprinkle with olives
  • Bake at 350 degrees for 30 minutes
  • Serve with your favorite taco toppings such as...sour cream, chopped tomatoes, chopped chives, black beans, and guacamole

  • Add drained black beans and drained sweet corn to the beef mixture. Cook along with beef, tomatoes, and onions
