Mexican Lasagna Recipe {Easy}

- 1&1/2 lbs. ground beef - sirloin or very lean
- 2 14 oz. stewed tomatoes
- 1 medium vidalia onion chopped
- ½ tsp. garlic powder
- ½ tsp. chili powder
- ½ tsp. table salt
- ¼ tsp. ground black pepper
- 4 10 in. flour tortillas You can also use 6 inch flour tortillas - you'll probably use around 6
- 3 cups Mexican Cheese Blend shredded
- 1 2 oz. black olives sliced - drained
In a large skillet, brown the beef - drain if necessary
Add tomatoes, onion and spices
Simmer, uncovered for 20 minutes
Arrange 1 layer of tortillas on the bottom of the pan - overlapping if needed
Cover tortillas with half of the beef mixture
Sprinkle half of the cheese over the beef
Repeat layers of tortillas, beef and then cheese
Sprinkle with olives
Bake at 350 degrees for 30 minutes
Serve with your favorite taco toppings such as...sour cream, chopped tomatoes, chopped chives, black beans, and guacamole
