What is Mexican Lasagna?

  • Mexican Lasagna is a fun twist on the classic Italian lasagna. Ingredients will vary, but most have a layer of tortilla shells in place of lasagna noodles, a layer of tomato and beef mixture in place of sauce and beef mixture, and a cheese layer. Some have black beans, corn, a cream cheese layer, sour cream, and/or refried beans.

This particular Mexican lasagna does not have the typical corn and beans like a lot of recipes, but you can easily add those to the beef mixture. You can really customize the ingredients to include your favorite taco ingredients. Rice would also be a great addition to the beef mixture.

  • ground beef – sirloin or very lean – I like to use sirloin because there is very little fat and rarely needs draining. Try to find a lean ground beef
  • stewed tomatoes
  • Vidalia onion, chopped – I usually use sweet onions instead of yellow onions, because yellow onions have such a strong flavor. It is totally up to you whether you prefer to use yellow or sweet
  • garlic powder
  • chili powder
  • table salt
  • ground black pepper
  • flour tortillas – I used 4 (10 in.) tortillas. You can also use 6-inch flour tortillas – you’ll probably use around 6
  • shredded Mexican Cheese Blend – Mexican blend is a blend of cheddar and Monterey Jack cheese
  • sliced ripe black olives – drained

How do you make Mexican Lasagna?

  • In a large skillet, brown the beef – drain if necessary
  • Add tomatoes, onion, and spices
  • Simmer, uncovered for 20 minutes
  • Arrange 1 layer of tortillas on the bottom of the pan – overlapping if needed
  • Cover tortillas with half of the beef mixture
  • Sprinkle half of the cheese over the beef
  • Repeat layers of tortillas, beef, and then cheese
  • Sprinkle with olives
  • Bake at 350 degrees for 30 minutes
  • Serve with your favorite taco toppings such as…sour cream, chopped tomatoes, chopped chives, black beans, and guacamole
