What is Mexican Lasagna?

  • Mexican Lasagna is a fun twist on the classic Italian lasagna. Ingredients will vary, but most have a layer of tortilla shells in place of lasagna noodles, a layer of tomato and beef mixture in place of sauce and beef mixture and a cheese layer. Some have black beans, corn, a cream cheese layer, sour cream and/or refried beans.

This particular Mexican lasagna does not have the typical corn and beans like a lot of recipes, but you can easily add those into the beef mixture. You can really customize the ingredients to include your favorite taco ingredients. Rice would also be a great addition to the beef mixture.
