The recipe that I had did not include taco meat, but I really think that would be a great addition to this recipe. Then, you might call this recipe a Taco Pie Recipe.
You could easily add a layer of taco meat between the refried beans and avocado.
A cornbread crust and layers of deliciousness. It’s like a fiesta in your mouth!

South of the Border Mexican Pie

Delicious taco or Mexican pie recipe.
- Prep Time: 15 minutes
- Cook Time: 30 minutes
- Total Time: 45 minutes
- Yield: 6-8 servings 1x
Ingredients
Cornmeal Crust
- 1/3 cup of softened butter
- 1 cup of flour
- 1/4 cup of yellow cornmeal
- 1/2 tsp. salt
- 3–4 Tbsp. water
Filling
- 1 can of refried beans
- 1 can of chopped green chilies, drained
- a few drops of hot sauce
- 1 avocado
- 1/4 cup of sour cream
- 1 Tbsp. of lemon juice
- 6–8 cherry tomatoes – sliced
- 1/2 cup of chopped sweet onion or chives
- 1/4 cup of cheddar cheese
- 1/4 cup of chopped green pepper
Instructions
- In a large bowl, add the salt and cornmeal, mix well
- Cut in the butter until the flour balls is coarse
- Add water until it turns into a dough
- Roll the dough on a lightly floured surface into a 9 inch circle, and place into a pie plate
- Prick the bottom with a fork
- Bake the crust at 475 degrees for 8-10 minutes
- Reduce the oven to 400 degrees
- In a medium bowl, mix the beans, chilies, and sauce
- Spread onto the bottom of the crust
- Place sliced tomatoes around the outside of the pie
- Arrange onions next in a circle next to the tomatoes
- In a small bowl, mash the avocado, sour cream and lemon juice
- Spread that around the middle of the pie
- Add cheese and green pepper
- Bake 15 minutes
