- 1& ¾ cup unsifted all-purpose flour
- 1 tsp. baking soda
- ½ tsp. salt
- 2 ripe bananas - mashed
- 1 cup chopped walnuts
- ¼ cup - plus 1 Tbsp. of buttermilk
- 1 tsp. vanilla extract
- 2 large eggs
- 1& ½ cups granulated sugar
- ½ cup oil - like canola or corn
Preheat the oven to 325 degrees
Grease muffin tins
In a large bowl, whisk flour, baking soda, and salt
Add the rest of the ingredients and mix
Pour batter into muffin tins - until they are about 3/4 of the way full
Bake for 20-25 minutes - or until golden and a toothpick inserted into the middle of a muffin comes out clean
