Easy Banana Nut Muffins

Materials

  • 1& ¾ cup unsifted all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 ripe bananas - mashed
  • 1 cup chopped walnuts
  • ¼ cup - plus 1 Tbsp. of buttermilk
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1& ½ cups granulated sugar
  • ½ cup oil - like canola or corn

Instructions

  • Preheat the oven to 325 degrees
  • Grease muffin tins
  • In a large bowl, whisk flour, baking soda, and salt
  • Add the rest of the ingredients and mix
  • Pour batter into muffin tins - until they are about 3/4 of the way full
  • Bake for 20-25 minutes - or until golden and a toothpick inserted into the middle of a muffin comes out clean
