Equipment

  • 1 9-inch round pan deep sides

Materials

Crust

  • 2 cups all-purpose flour
  • 3 tsp. baking powder
  • ½ tsp. salt
  • 1 cup butter 2 sticks - unsalted
  • *optional - nuts - crushed or chopped into small bits

First Layer

  • 8 oz. cream cheese
  • 3 cups powdered sugar
  • 12 oz. Cool Whip

Top Layer

  • 1 cup sugar
  • 1 cup water
  • 3 Tbsp. cornstarch
  • 3 oz. strawberry Jell-O
  • 2 pt. fresh strawberries - sliced

Instructions

  • Mix flour, baking powder, and salt
  • Melt butter and mix with flour mixture
  • press into a deep round baking pan or pizza pan
  • Bake at 350 for about 12 minutes or until done
  • blend cheese and sugar until smooth
  • fold in Cool Whip
  • Spread cream cheese layer over baked crust
  • *If using a shallow pan, pull the cheese up on the sides so the filling will not run out
  • in a saucepan over med/high heat, mix water, sugar, and cornstarch
  • bring to a boil
  • cook until clear
  • add Jell-O and mix
  • cool completely - for at least 30 minutes
  • add strawberries and spread mixture over the top of cream cheese
  • Chill in the refrigerator for an hour or more before cutting

Notes

  • you can use self-rising flour, but omit baking powder and salt in the crust
Store covered in the fridge for up to 3 days
