Crust
- 2 cups all-purpose flour
- 3 tsp. baking powder
- ½ tsp. salt
- 1 cup butter 2 sticks - unsalted
- *optional - nuts - crushed or chopped into small bits
First Layer
- 8 oz. cream cheese
- 3 cups powdered sugar
- 12 oz. Cool Whip
Top Layer
- 1 cup sugar
- 1 cup water
- 3 Tbsp. cornstarch
- 3 oz. strawberry Jell-O
- 2 pt. fresh strawberries - sliced
Mix flour, baking powder, and salt
Melt butter and mix with flour mixture
press into a deep round baking pan or pizza pan
Bake at 350 for about 12 minutes or until done
blend cheese and sugar until smooth
fold in Cool Whip
Spread cream cheese layer over baked crust
*If using a shallow pan, pull the cheese up on the sides so the filling will not run out
in a saucepan over med/high heat, mix water, sugar, and cornstarch
bring to a boil
cook until clear
add Jell-O and mix
cool completely - for at least 30 minutes
add strawberries and spread mixture over the top of cream cheese
Chill in the refrigerator for an hour or more before cutting
- you can use self-rising flour, but omit baking powder and salt in the crust
Store covered in the fridge for up to 3 days
