Equipment

  • football shaped cookie cutter
  • candy squeeze bottle if using melted white chocolate. Or, you can use a baggie and snip a tiny corner to squeeze chocolate out of
  • parchment paper
  • Baking Sheet

Materials

  • 6 cups rice cereal
  • 3 Tbsp. butter unsalted
  • 5&1/2 cups mini marshmallows - fresh
  • 1 12 oz. Brown chocolate melts
  • 1 6 oz. White chocolate melts or white cookie icing with a writing tip

Instructions

  • line a 9x13 pan with parchment paper
  • spray parchment paper with cooking spray
  • in a large saucepan, melt butter
  • add marshmallows, and stir until melted (on low/med. heat)
  • In a large bowl, pour in the rice cereal
  • add melted marshmallow mixture
  • Stir until combined
  • pour into a lined baking dish and spread out
  • *tip - spray your spreading utensil with cooking spray so it doesn't stick to the cereal
  • let cool for 5-10 minutes
  • pull the rectangle of rice krispies out of the pan
  • cut a football shape with your cookies cutter
  • melt brown chocolate melts
  • spread onto football rice treats

Decorating

  • for melted white chocolate - melt chocolate and pour it into a squeeze bottle for decorating
  • for icing - use a writing tip to decorate
  • decorate footballs with laces and curved lines on the tips

Notes

Store covered and at room temperature for up to 3 days

    • use fresh marshmallows - I know this from experience. If you use old marshmallows that are not soft then your treats will be hard and unworkable
    • form your big sheet of rice treats in a large baking dish using parchment paper as a liner for a non-stick liner
    • add cooking spray to the parchment paper for another non-stick step
    • spray cooking spray on your spreading utensil so it doesn't stick to the treats
