Candied Pumpkin Seeds

Jell-O Candied Pumpkin Seeds are such a delicious way to enjoy this classic snack.

Equipment

  • 1 Baking Sheet

Materials

  • Pumpkin seeds - rinsed and drained
  • A parchment paper-lined baking sheet
  • ½ stick of butter 4 Tbsp.
  • 3 Tbsp. light corn syrup
  • ½ cup light brown sugar
  • 1 3 oz. jello - any flavor

Instructions

  • Preheat your oven to 350 degrees
  • Place your pumpkin seeds onto the baking sheet,
  • If you  want these to be salty-sweet, now is the time to salt them
  • Let them bake for about 10 minutes, or until they are dried out, and turning a golden brown. When they have baked enough, toss them. Leave them on the parchment paper, and set aside
  • While those are cooking...grab yourself a saucepan
  • Over med/high heat, melt the butter
  • Add the corn syrup, and brown sugar - Mix it all together
  • Add the jello. Stir in. Stirring constantly...Bring mixture to a boil, reduce the heat, and simmer for about 5 minutes
  • Pour jello mixture onto the pumpkin seeds, spread the mixture around
  • Bake for another 10 minutes
  • Let cool slightly, so the mixture is still soft, but won't burn you
  • Pull seeds apart in clusters, and toss into a serving bowl

For Salty/Sweet Pumpkin Seeds:
Add another layer of flavor, by salting the pumpkin seeds before baking them.
For Salted Pumpkin Seeds from the store...
If you're lucky enough to find salted pumpkin seeds (I found them at Aldis), then eliminate the pre-baking part.
