Lemon Cookies

Tangy, sweet, and soft lemon cookies. So refreshing. Perfect for a nice summer day.

Materials

  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • ½ cup applesauce
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 cup Lemonade Drink Mix
  • 1 tsp. baking soda

Topping:

  • 4 Tbsp. Lemonade
  • Sugar for sprinkling

Extra Equipment:

  • cooling rack
  • wax paper
  • parchment paper

Instructions

  • Preheat the oven to 400 degrees
  • In a mixing bowl or stand mixer - cream the butter and sugar together
  • Add applesauce and eggs
  • In a separate bowl, combine the flour, lemonade powder, and baking soda
  • Mix the dry ingredients into  the wet mixture
  • Either use a cookie scoop or roll the dough into 1&1/2 inch balls and place it onto baking sheets that have been lined with parchment paper
  • Bake the cookies for 8-10 minutes
  • Transfer to a wire rack
  • While the cookies are still warm, brush the cookies with your Lemonade and sprinkle with sugar
