Easy And Delicious Watermelon Rice Krispie Treats Recipe

Easy to make watermelon-shaped Rice Krispies treats that are perfect for summer fun!

Equipment

  • wax paper
  • pie plate or 9-inch cake pan
  • silicone spatula recommended
  • spray cooking oil butter flavored
  • pizza cutter or serrated knife
  • optional: popsicle sticks or craft sticks

Materials

  • 3 Tbsp. of unsalted butter
  • 10 oz. bag of mini marshmallows
  • 6 cups rice crisp cereal
  • red food coloring
  • green food coloring
  • 1 tbsp. chocolate chips

Instructions

  • in a saucepan over medium heat, melt butter
  • remove the saucepan from heat
  • add marshmallows and stir until melted
  • divide the marshmallow up into 2 bowls
  • pour 1/3 of the marshmallow into a medium-sized bowl
  • add green food coloring and stir until it is the color that you would like
  • pour in 2 cups of the cereal and mix
  • in a large bowl, pour the rest of the marshmallow mixture
  • add red food coloring and stir until the pink is dark enough for you
  • add the remaining 4 cups of rice cereal and mix to coat
  • place a sheet of wax paper in a pie pan (or cake pan) and press down
  • scoop out the green rice Krispies into the pan and form a circle around the edge of the pan with the center not filled in
  • pour the pink rice Krispies into the center circle and press down with a silicon spatula that has been sprayed with cooking oil or buttered, until it has filled the center and is even with the green edging
  • let cool for about 5-10 minutes
  • lift the wax paper (with the treats on it) up and out of the pan and place it on a work surface
  • push chocolate chips upside down into the pink portion of your treat
  • spray your knife or pizza cutter with non-stick cooking oil spray slice into 8 slices
  • optional: push craft sticks into the green centers

Rice Krispie Treats can be made a few days in advance. However, if treats are exposed to air they may harden up. Make sure treats are stored in an air-tight container

Why is my Rice Krispie Treat hardening up so fast?

Sometimes rice Krispie treats can harden so fast that they don't stay pliable for molding or cutting. I have found that using only fresh marshmallows is the best way to make Rice Krispie treats. Every time that I have used a previously opened bag of marshmallows, my treats have been frustrating to work with
Another tip is to keep the heat low and slow. I know, I'm impatient too, but trust me. Using high heat will only harden your marshmallow mixture turning your treats into rock candy

 Tips and Tricks:

  • use mini marshmallows - mini marshmallows will melt faster with less effort on your part
  • only use fresh - never opened - bags of marshmallows. This is a key ingredient to an easy experience with rice Krispies treats
  • keep the heat low to medium - this will help keep your treats nice and soft
  • you can use a pie pan or a cake pan for this treat. The only difference will be that a pie pan will have a slanted edge where the crust would normally be
