Smoked Sausage Stir Fry

A delicious smoked sausage stir fry that is an easy and inexpensive meal to make

Equipment

  • 1 large skillet

Materials

  • 2 cups white rice cooked
  • 1 Tbsp. olive oil
  • 1 onion Vidalia, yellow, or white
  • 1 head broccoli florets
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 8 oz. mushrooms sliced fresh
  • 2 large tomatoes
  • ½ tsp. salt
  • 1 12 oz. smoked sausage beef

Instructions

  • In a large skillet - heat the olive oil and add all of the vegetables - except the tomatoes
  • Cook for about 10 minutes over medium heat, or until vegetables are tender and onion is translucent
  • Add the tomatoes and cook until tomatoes are soft, and juices are running - about 4 minutes
  • Add the salt and stir in
  • Add the smoked sausage and continue to cook until the sausage is heated through and browned on the outer edges
  • Set plates up by scooping some brown rice onto the plate and topping them with Smoked Sausage Mix
  • Optional Extras to serve with stir fry: Soy Sauce and Chow Mein Noodles

  • feel free to substitute vegetables for ones that you prefer - good ideas are squash, carrots, cauliflower, and corn
