Smoked Sausage Stir Fry

- 2 cups white rice cooked
- 1 Tbsp. olive oil
- 1 onion Vidalia, yellow, or white
- 1 head broccoli florets
- 1 yellow bell pepper
- 1 green bell pepper
- 1 8 oz. mushrooms sliced fresh
- 2 large tomatoes
- ½ tsp. salt
- 1 12 oz. smoked sausage beef
In a large skillet - heat the olive oil and add all of the vegetables - except the tomatoes
Cook for about 10 minutes over medium heat, or until vegetables are tender and onion is translucent
Add the tomatoes and cook until tomatoes are soft, and juices are running - about 4 minutes
Add the salt and stir in
Add the smoked sausage and continue to cook until the sausage is heated through and browned on the outer edges
Set plates up by scooping some brown rice onto the plate and topping them with Smoked Sausage Mix
Optional Extras to serve with stir fry: Soy Sauce and Chow Mein Noodles
