Red Velvet Whoopie Pie Recipe

A delicious whoopie pie with a cream cheese center

Equipment

  • parchment lined baking sheet
  • piping bag fitted with a star tip or wide writing tip

Materials

  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 2 tsp. unsweetened cocoa powder
  • 1 tsp. baking powder
  • ½ tsp, salt
  • ½ cup canola oil
  • 1 tsp. white vinegar
  • 1 oz, liquid red food coloring
  • 1 tsp. vanilla extract
  • 1 cup buttermilk
  • 1.5 cups sugar
  • 2 large eggs

Filling

  • 8 oz. cream cheese sotened
  • ½ cup butter unsalted - softened
  • 2.5 cups powdered sugar
  • 2 tsp. vanilla extract

Instructions

  • Set your oven to 350 degrees Fahrenheit
  • In a medium mixing bowl - add the flour, baking soda, cocoa powder, salt, & baking powder
  • In a separate large bowl, combine the oil, red food coloring, vinegar, vanilla extract, and buttermilk
  • Using a whisk or mixer and yet another smaller bowl - Mix the eggs and sugar
  • Add the egg mixture to the buttermilk mixture and blend
  • Gradually add the dry ingredients and mix in
  • Drop a Tablespoon full of the batter onto a parchment-lined baking sheet
  • bake for about 12 minutes
  • While those are baking, mix the filling ingredients
  • Use a piping bag and star tip to add cream cheese filling onto a cooled Whoopie Cookie and add another Whoopie Cookie to the top, press together to make your Whoopie Pie
