Blueberry Buckle Coffee Cake

A delicious coffee cake or dessert.

Materials

  • ¼ cup of butter softened
  • 1 egg
  • 2 t of baking powder
  • ½ c of milk
  • ¾ c of sugar
  • 1 &1/2 c of flour
  • ½ t salt
  • 2 c of blueberries

Crumb Topping:

  • ½ c of brown sugar
  • ½ t of cinnamon
  • c of flour
  • ¼ c butter - cut up

Instructions

  • Preheat the oven to 375 degrees
  • In a large bowl, cream the butter and sugar
  • Mix the egg into the cream mixture
  • In a small bowl, sift the flour, salt, and baking powder
  • To the cream mixture, alternate adding some of the flour mixture and the milk until it is all mixed in
  • Fold in the berries
  • Spoon the batter into a greased 9x9 inch baking pan
  • Use a fork to mix the crumb streusel topping
  • Sprinkle the crumb topping over the batter
  • Bake for 40-45 minutes

Notes

  • Serving suggestion - Serve with whipped topping or vanilla ice cream
Check for doneness with a toothpick. If it comes out clean without any wet batter, it is cooked through
