Materials

  • 1 medium carrot sliced
  • ¼ cup celery chopped
  • 2 cups chicken broth
  • 3 tbsp. butter unsalted
  • 2 tbsp. flour all-purpose
  • ¾ tsp. salt
  • tsp. pepper
  • 1 medium cauliflower head cut into florets
  • 2 cups milk 2%
  • 1 cup cheddar cheese shredded

Instructions

  • In a Dutch oven, melt 1 tbsp. of butter
  • sautee onion, carrot, and celery
  • Add 2 tbsp. of butter and let it melt
  • Add 3 tbsp. flour
  • Mix to make a roux
  • Add milk, broth, salt, pepper, and cauliflower
  • Bring to a boil, reduce, and simmer for 12-15 minutes
  • Stir in the cheese until melted
