- ½ cup butter  unsalted -  softened
- 1 cup dark brown sugar packed 
- 1 large  egg
- 1 Tbsp. orange juice
- 1 tsp vanilla extract
- 1&3/4  cup  all-purpose flour
- 2 tsp. ground ginger
- ½ tsp. baking soda
- 2 tbsp granulated sugar for sprinkling
- Preheat the oven to 350 degrees 
- In a large bowl or mixer, cream the butter and brown sugar together 
- Add the egg, orange juice, and vanilla 
- In a separate bowl, mix the flour, ginger, and baking soda 
- Add the flour mixture to the wet ingredients and mix until moist 
- Drop by spoonfuls or use a cookie scoop to drop batter onto greased baking sheets lined with parchment paper 
- Dip a fork into the water, and press it onto the cookie dough. This is what makes the washboard effect. Slide or lift the fork off of the cookie 
- Sprinkle the cookies with granulated sugar 
- Bake for 15-20 minutes 
Cookies will spread while baking them
