Materials
1 can refrigerated biscuits buttery biscuits preferred
2 tbsp. butter divided
½ cup green pepper diced
4 oz. mushrooms canned - drained
½ cupwhite cooking wine
3chicken breasts
3 bay leaves
½ cup water
½ tsp. salt
½ tsp. ground pepper
3tbsp. flour
2 cups whole milk can use 2%
½ cup pimento olives whole or sliced
Instructions
Bake the biscuits according to the package directions.
Meanwhile, in a large skillet, melt 1 Tbsp. of butter over medium heat
Add mushrooms and pepper and cook until tender
In another skillet, add the white wine, chicken breasts, and bay leaves
Cook over medium to high heat until the wine comes to a boil. Then, turn the heat down to a low simmer, cover, and cook for about 15 minutes, turning the chicken halfway through.
The wine will eventually evaporate, leaving you with some browning at the bottom of your skillet
While the chicken is cooking, add 1 Tbsp. of butter (over medium/high heat) to the cooked vegetables
Add 1 Tbsp. of flour to the melted butter and mix into a paste
Mix 2 tbsp. of flour into the milk and pour whisk it into the paste. Add chicken broth, salt, and some ground pepper, distributing them evenly throughout the vegetables.
Remove bay leaves and chicken from the other skillet
Throw the bay leaves away and cube the chicken
Add 1/2 cup of water to the chicken pan and stir, scraping up all the good stuff from the bottom of the pan.
Pour those juices into the gravy mixture and cook until thickened.
If you need to thicken the gravy further, mix one tablespoon of flour with one tablespoon of milk and add it to your gravy.
Cook the mixture until it reaches the desired thickness.
Cook until the gravy is thickened.
Fold in chicken and 1/2 cup of sliced pimento-stuffed green olives
To serve, open the biscuits up and pour the chicken mixture over the biscuits
