Equipment

  • 1 large pot

Materials

  • 2 tsp.  Salt plus salt to taste
  • 6 cups Water
  • 2 cups Elbow Noodles
  • 2 tbsp. Butter unsalted
  • 1 cup Mexican Blend Shredded Cheese. Do not substitute another cheese here. The Mexican Blend is the most kid-friendly and is what gives it its mild yet delicious cheese flavor.
  • `1 cup Milk add 1/2 cup more, if needed
  • 2 tbsp. flour all-purpose

Instructions

  • Cook noodles until they are soft which should be a couple of minutes past the al dente method
  • While those are cooking, prepare the cheese sauce
  • Melt butter in a medium sized sauce pan
  • Add flour and whisk in
  • Add cheese and 1 cup of milk
  • stir until smooth. If needed add up to 1/2 cup of milk more to smooth the sauce out.
  • Sauce should be smooth, creamy, and easily poured out.
  • Drain the pasta noodles
  • Pour the cheese sauce over the noodles and fold in
  • Salt to taste
  • Serve immediately
