Equipment

  • baking pan lined with parchment paper

Materials

  • 30 oz. chocolate chip cookie dough I used a large tube of Pillsbury refrigerated cookie dough
  • 15 marshmallows
  • 30 candy eyeballs Halloween

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper
  • Cut off a cookie dough section and roll it into a ball about one inch wide.
  • Place that cookie ball onto the parchment paper and cut it down the middle
  • Spread the two halves a little bit apart
  • Take a marshmallow and cut the length of it in half so it is a little bit shorter.
  • Place the half marshmallow piece in between the two cookie dough halves.
  • Form a circle around the marshmallow with the cookie dough and press the ends together to seal the edges.
  • Partially bake the cookies. Bake them for about 8 minutes.
  • Take them out and place the candy eyes onto the center of the marshmallow center.
  • Bake for an additional 3-4 minutes.
  • Take them out and let them cool slightly before transferring them. The middle will be melted marshmallows, so you want to let them harden a bit before moving them.
