Grilled Ribeye Steak with Greek Relish

Materials

  • 2 plum tomatoes - chopped
  • 1 small red onion - chopped
  • 1 cup pitted Greek olives
  • 2 Tbsp. fresh cilantro
  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 1 tsp. minced garlic
  • 1 large beef ribeye steak
  • 1 cup crumbled feta cheese

Instructions

  • Make the relish:
    In a medium bowl, combine the chopped tomatoes, red onion, olives, cilantro, olive oil, 1 tablespoon of lemon juice, and minced garlic. Stir gently and set aside to let the flavors meld.
  • Prepare the steak for grilling:
    Place the ribeye on a large piece of heavy-duty aluminum foil. Drizzle the remaining 1 tablespoon of lemon juice over both sides of the steak. Fold up the sides of the foil to create a sealed packet around the steak.
  • Grill the steak:
    Place the foil packet on a hot grill and cook for about 7 minutes, flipping halfway through, or until the steak is nearly at your desired doneness.
  • Finish on the grill for perfect marks:
    Carefully open the foil, remove the steak, and place it directly on the grill for about 1 minute per side. This gives the steak beautiful grill marks and a slightly crisp exterior.
  • Serve:
    Slice the steak against the grain and top with the Greek relish and crumbled feta cheese. Serve immediately and enjoy.
