Materials
2plum tomatoes - chopped
1small red onion - chopped
1cup pitted Greek olives
2Tbsp.fresh cilantro
2Tbsp.olive oil
2Tbsp.lemon juice
1tsp.minced garlic
1large beef ribeye steak
1cupcrumbled feta cheese
Instructions
Make the relish:In a medium bowl, combine the chopped tomatoes, red onion, olives, cilantro, olive oil, 1 tablespoon of lemon juice, and minced garlic. Stir gently and set aside to let the flavors meld.
Prepare the steak for grilling:Place the ribeye on a large piece of heavy-duty aluminum foil. Drizzle the remaining 1 tablespoon of lemon juice over both sides of the steak. Fold up the sides of the foil to create a sealed packet around the steak.
Grill the steak:Place the foil packet on a hot grill and cook for about 7 minutes, flipping halfway through, or until the steak is nearly at your desired doneness.
Finish on the grill for perfect marks:Carefully open the foil, remove the steak, and place it directly on the grill for about 1 minute per side. This gives the steak beautiful grill marks and a slightly crisp exterior.
Serve:Slice the steak against the grain and top with the Greek relish and crumbled feta cheese. Serve immediately and enjoy.
