- 5 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 tablespoons minced garlic
- 4 cups heavy cream
- 2 teaspoons garlic powder
- ½ teaspoon ground white pepper
- ¼ teaspoon salt
- 1 cup grated Parmesan and Romano cheese blend such as Kraft
Melt the butter with the olive oil in a large saucepan or skillet without browning the butter.
Add the minced garlic. Cook briefly, stirring, until fragrant. Do not brown or burn the garlic.
Pour in the heavy cream. Add the garlic powder, white pepper, and salt. Whisk until well incorporated.
Whisk in the grated Parmesan-and-Romano cheese blend.
Bring to a gentle simmer. Cook, stirring often, for about 5 minutes, until the sauce starts to thicken. For a thicker sauce, continue cooking for up to 10 minutes total after adding the cheese.
Remove from the heat. The sauce will continue thickening as it cools. Serve over cooked pasta or as a breadstick dip.
Cheese: I tested Parmesan alone and the Parmesan-and-Romano blend. Both tasted delicious, but I preferred the blend for its sharper flavor and closer match to the restaurant sauce.
Salt: Use unsalted butter and keep the added salt to ¼ teaspoon for the flavor of my final tested batch.
Servings: Listed as four servings when used as a pasta sauce. The number of portions will vary when served as a dip.
Storage: Refrigerate promptly in shallow, covered containers and use within three to four days.
Reheating: Microwave in 30-second intervals, stirring between intervals, until heated to 165°F throughout.
